Cookies for Christmas: Let’s Visit Italy

It’s hard to explain how these melting morsels found their place in our family’s holiday cookie list. Try and batch, and maybe you can tell us!

Italian Holiday Cookies

3 – 4 dozen

Ingredients

1/2 cup butter
1/3 cup sugar
1 egg, separated
1/4 tsp vanilla
1 1/4 cup sifted flour
1/2 tsp salt
1 c flaked coconut
preserves of your choice

Cream butter and sugar. Beat in yolk and vanilla.

Stir in flour and salt.

Chill.

Shape 1″ balls. Dip balls in beaten egg white, then coconut.

Place on baking sheet and depress the center of each ball with your finger. Fill the depression with preserves.

Bake 20 – 25 minutes. Cool on rack.
