Cookies for Christmas: Roll and Cut

Roll Cookies

about 40 2″ cookies

Preheat oven to 375° F

Try a double batch if you want lots of Christmas cookies!

Ingredients

½ cup white or brown sugar
½ cup butter
1 tsp vanilla
2 eggs
2½ cup sifted flour
2 tsp baking powder
½ tsp salt

Cream sugar and butter.

Beat in vanilla, eggs, baking powder, salt, and flour.

Chill 3-4 hours. I’ve often rolled without chilling at all: you choose.

Roll ¼” thick. Cut shapes with cookie cutters or a glass. Decorate.

Bake 7-12 minutes.

Rich Roll Cookies

about 60 2″ cookies

Preheat oven to 250° F

Ingredients

1 cup butter
⅔ cup sugar
1 egg
1 tsp vanilla or almond extract
2½ cup sifted flour
½ tsp salt
(½ tsp grated lemon rind, or 1 TBSP cinnamon, or 2 TBSP poppy seeds)

Prepare as for the first recipe.

Bake 8 – 10 minutes.
