So Easy and So Good

Here’s a side dish that takes about as long to prepare as a hamburger does, so you can have both for dinner. If you begin cooking carrots in a skillet with lid, you’ll have a single pan to wash.

Honey Mustard Carrots

Serves 4

Ingredients

3 c carrots
3 TBSP honey
2 TBSP prepared mustard of your choice
oil or bacon drippings

Cut carrots into 3″ pencils, peeling if you must (we don’t).

Steam or boil in a little water for about 7 minutes, if the carrots are mature – 5 minutes if they’re young. Don’t go beyond al dente phase.

Drain, return to the skillet, add bacon drippings, and sear for 3 minutes or so.

Add the honey and mustard, coat the carrots, and serve.
