Lemons to Warm Your Heart and Wake Up Your Taste Buds
These are delicious and easy to make, but also fattening and a bit sweet. Someone gave us several gorgeous, orange-sized California lemons, and this recipe seemed the perfect way to spread the sunny tartness around.
Try a bar with a cup of black, strong coffee if the mid-morning hungries hit.
Lemon Bars
24 generous cookies
Preheat oven to 350° F
Ingredients
Crust
1 cup butter
dash salt
1/2 cup powdered sugar
2 cups flour (wheat or rice)
Combine.
Press into a 9X13″ greased pan.
Bake 15 minutes.
Filling
4 eggs
2 cups sugar
1/4 cup flour (wheat or rice)
6 TBSP lemon juice
optional: 2 TBSP lemon zest
Combine.
Pour over crust right after you remove it from oven.
Bake 25 minutes.
Sprinkle with powdered sugar.
Cut while warm. Cool to room temperature before serving.
