Well, perhaps. Try this salad at room temperature or chilled, with feta or a tangy aged white cheddar – whichever way your mood runs.
Tomato Basil Salad with Feta Cheese
Ingredients
- 1 bunch basil, stems removed, diced
- 20 cherry tomatoes halved, or 10 small (1-1.5 inch) tomatoes, quartered
- 1 medium cucumber, peeled and sliced
- ¼ cup feta cheese, crumbled
- 2 tsp balsamic vinegar reduction (or substitute 1 tsp balsamic vinegar)
- 1 tsp honey
- 1 tbsp mustard
- 1 tbsp plain yogurt
- Salt and pepper to taste
Mix all ingredients and serve at room temperature. Spice it up with hot cayenne powder for a kick.
