When they ripen, is there anything better than a salt shaker, a knife, and a sun-warm tomato?

Well, perhaps. Try this salad at room temperature or chilled, with feta or a tangy aged white cheddar – whichever way your mood runs.

Tomato Basil Salad with Feta Cheese

Ingredients
  • 1 bunch basil, stems removed, diced
  • 20 cherry tomatoes halved, or 10 small (1-1.5 inch) tomatoes, quartered
  • 1 medium cucumber, peeled and sliced
  • ¼ cup feta cheese, crumbled
  • 2 tsp balsamic vinegar reduction (or substitute 1 tsp balsamic vinegar)
  • 1 tsp honey
  • 1 tbsp mustard
  • 1 tbsp plain yogurt
  • Salt and pepper to taste

Mix all ingredients and serve at room temperature. Spice it up with hot cayenne powder for a kick.
