Let’s Hear It for Green Chili Peppers
Try one of Nicole Sauce’s signature dishes, as enjoyed in recent weeks at Hatch Chili Weekend.
Green Chili Stew
Serves many!
Ingredients
1 quart stewed or diced fresh tomatoes
1 onion, chopped
8 cloves garlic, diced
1 tsp cumin
3 potatoes, diced
2 cups green chilies, roasted, peeled, and diced
1 pound ground beef
4 cups stock
Salt and pepper to taste
Brown the beef, onions, and garlic.
Toss everything into a crockpot and cook on low for 6 – 8 hours.
Serve with condiments as available: chopped scallions, grated cheese, chopped raw vegetables (sweet pepper is delicious), chopped hot pepper, sour cream or yogurt, guacamole, and whatever your imagination surfaces.
Sometimes the stew turns out red; more often the general color is green or brown.
Though Nicole doesn’t add dried beans, if you love them, you can!
