This very easy condiment adds zing but doesn’t also bring on a case of onion mouth. We use it sometimes in simplest form – onion and salt – and sometimes with lemon or lime juice.

I love red onions for both flavor and cheerful color, though any onion works: yellow, white, or scallions.

Desiccated Onions

OK: it’s a leek.

Ingredients

Onions
Salt
(lime or lemon juice)

Sliver onions into a large bowl. If you use scallions, chop either tops alone or the entire plant.

Sprinkle lavishly with salt and stir.

Set aside for at least an hour, stirring when you think about it.

Drain the liquid (use it in another dish as onion flavor and salt!). Rinse the onions if you wish.

Chill and serve as a meat relish, sandwich condiment, atop a salad, or to enhance a side dish.

Try with onion and salt only, then experiment by adding the juice of one or two limes (or lemons), chili powder, caraway seeds, chopped fresh oregano or mint, shaved fresh ginger root, or smoked paprika.

Keeps nicely in refrigerator.
