Use What You Have
The other night, we’d run out of fresh vegetables altogether, except for a pound or so of small beets. Look what happened!
Simply Beety
Serves 4
Ingredients
1 pound beets
Onion or something sharp-tasting
Salt and pepper
Mustard
Oil
Vinegar
1 tsp honey
(Coconut, dry and unsweetened, curry, and chile peppers)
Peel and grate the raw beets.
Chop whatever else you’re putting in.
Add the rest of the ingredients, toss, and let sit for 15 minutes or so.
Another time, skip the coconut and its spices, and serve over watercress, which is in season when beets are.
