Upcycle Your Halloween Pumpkin
You can appreciate that beautiful or homely Jack-O’-Lantern after Halloween by consuming it in one of many delicious dishes. Here’s a drink sure to please on a chilly autumn evening.
Pumpkin Nog
Serves 2
Ingredients
1½ cups cream, half and half, milk, or milk substitute
1 egg plus 1 yolk
3 TBSP sugar (or substitute)
½ tsp pumpkin pie spice (or your favorite combination of spices)
½ tsp cinnamon
⅛ tsp salt
¼ tsp vanilla
¼ cup pumpkin puree
(Nutmeg, grated [Adds garnish plus flavor.])
(Whipped cream and chocolate or caramel syrup – or not)
Whisk together cream, egg, yolk, sugar, pumpkin pie spice, cinnamon, salt, and vanilla, then heat over medium-high heat until almost boiling point. Watch for thickening and froth.
Remove from the heat and whisk in pumpkin.
Serve in mugs garnished with nutmeg – or cold, if that’s how you like your nog.
